A chestnut cream is added to the base of the Liver Bread. This gives the product a sweet spot in contrast to the salty taste.
Liver Bread is a local version of the typical French country pâté; its texture is smooth and creamy. It contains its ingredients in small pieces that are soft but not completely dissolved.
It is made by combining pork liver and bacon, eggs, salt, pepper, garlic, parsley and a chestnut cream. The mixture is placed in a container and covered with the cloth that protects the liver, finally it is cooked in a water bath in a totally closed space such as an oven or a boiler.
