The llardons, also known as brescallons or greixons, in Castilian the typical chicharrones, are small portions of bacon with some pieces of crust, ideal for eating alone or for preparing sweet or salty recipes such as Cocas or “Coques” with pork rinds. Ideal as Hors d’oeuvres to accompany a drink.
The pork rinds are placed in the heat and the cooking is carried out with their own oil. Once cooked, they are pressed to remove excess fat. They are golden and crisp.
