Like all cooked sausages called Bull, its production process helps maintain its smooth flavor and tender texture for longer. It is also known in certain places as “paltruc”.
Made with the same base as the black bull, adding pieces of the ear, snout, tongue and dewlap, all marinated with salt and pepper and stuffed into the pork belly.
