Ventresca is an artisan cold cut, made in a 100% traditional way with the ventral (belly) muscles of the pig, hence its name. Considered one of the most exquisite cuts of pork, since it is one of the tastiest parts of the pig.
The preparation of the Ventresca is done in a very traditional way, with salt and pepper, these are macerated in a balanced way to finally undergo a slow curing process.
